Yields about 4 servings
Ingredients:
1 pound fresh asparagus
1 tablespoon extra virgin olive oil
1 lemon, halved
Directions:
Preheat the grill to medium heat, 350°F to 400°F.
Remove the woody ends of the asparagus by snapping off the ends. You can do this by bending each stalk gently, about 2/3 of the way down the stalk, until it naturally breaks-this is where the woody part of the asparagus begins. Use a knife to even up the ends of the stalks. Discard the ends or save for another recipe-like cream of asparagus soup.
Place the asparagus spears in a baking sheet, drizzle with the olive oil and toss to coat.
Sprinkle with Duck Duck Chicken Poultry Seasoning & Rub and toss again.
Place the asparagus across the grill grates-being careful not to lose any between the grates. Grill for 6 to 10 minutes or until the spears are tender and crisp. Use tongs to roll the spears over for even cooking and grill marks.
Transfer grilled asparagus to a platter and squeeze lemon juice over the asparagus.
Serve warm or room temperature.
*leftover grilled asparagus makes a lovely chilled salad.
