Quick & Easy: Roasted Chicken & Broccoli Frittata

Is it me or does it seem like the days are getting busier!

That's why I'm in LOVE with this Quick & Easy recipe for Chicken & Broccoli Frittata. . . which is just a fancy name for a casserole! The magic of this dish is using my Duck Duck Chicken Poultry Seasoning & Rub along with chicken from a previous meal-or picking up a rotisserie chicken from your favorite market. Duck Duck Chicken Poultry Seasoning & Rub is the only spice blend you'll need and the cooked chicken are both HUGE time savers.

Add a tossed salad and some warm buttered bread, and dinner is served.

Chicken & Broccoli Frittata


Yields about 6 servings


Ingredients:

1 tablespoon butter, room temperature

2 cups florets, rough chopped

2 cups cooked chicken, diced

8 large eggs

1 cup half-and-half

2 tablespoons Duck Duck Chicken Poultry Seasoning & Rub

2 cups sharp Cheddar cheese, shredded

Garnish

1 tablespoon chopped parsley


Direction:

Preheat oven to 400 °F.


Lightly butter 9x13 casserole dish.

Place the chopped broccoli and chicken on the bottom of the dish and set aside.

In a large bowl whisk eggs until blended.

Whisk in the cream and the poultry seasoning. Stir in half of the cheese and pour into the prepared casserole dish.

Sprinkle the top with remaining cheese.

Bake for 30 to 35 min or until puffed, golden and eggs have a slight jiggle when gently shaking the pan.

Let stand for 5 min before serving.
