Infuse olive oil with your favorite fresh herbs and aromatics-like garlic and shallots.
1 cup extra-virgin olive oil
1/4 cup fresh herbs like basil, rosemary, thyme
Place the herbs and oil in a small heavy bottomed sauce pan.
Heat over low heat for 10 minutes. You want the oil to get HOT but not simmer.
Turn off the heat and let the herbs infuse in the oil for about 1 hour.
Strain into a clean, dry glass bottle or jar, cover tightly and store away from direct light or heat at room temperature for to 2 months, or in the refrigerator for up to 6 months.
*garlic infused oils should always be stored in the refrigerator-for up to 1 month.
